Bardstown Bourbon Company's Fusion and Discovery Series

 

If anyone reading this has been through Bardstown, Kentucky recently, you know that the relatively small town is experiencing a bit of a boom due to the rising popularity of America's favorite spirit. One of the shining stars in the town is Bardstown Bourbon Company, with their sprawling new state of the art distillery and restaurant, Bottle and Bond. Just a bit about the distillery from their website:


"Located in the heart of Bourbon Country on 100 acres of active farmland, Bardstown Bourbon Company is one of the country’s most modern and technically advanced whiskey distilleries. Celebrating the art of making high-quality, authentic whiskey, the innovative distillery produces custom rye, whiskey and bourbon for prominent brands including Jefferson’s, High West, Belle Meade, Hirsch and many others through its one-of-a-kind Collaborative Distilling Program. Bardstown Bourbon Company honors tradition and drives innovation with its exceptional destination experience for visitors, offering the only full-service restaurant located within a distillery on the Kentucky Bourbon Trail, Bottle & Bond Kitchen and Bar. The company was founded in 2014 by Peter Loftin, David Mandell, Daniel Linde, and Garnett Black. "


The folks over at Bardstown Bourbon Company were generous enough to send our group some samples of their newest releases; the Fusion and Discovery Series. A few of us over here at the Bourbon Underground sat down tonight and tried them both, here are our thoughts:



Bardstown Bourbon Company Fusion Series #1

Bardstown Bourbon Company Fusion Series #1 Kentucky Straight Bourbon Whiskey (98.9 proof/49.45% ABV)


First up is the Fusion #1 Series. This release is a blend of 3 different bourbons: 40% comes from a sourced Kentucky straight bourbon with a rye mashbill that's been aged 11 years and 7 months (74% corn, 18% rye, 8% malted barley), 18% from a wheated mashbill by Bardstown Bourbon Company aged 2 years and 3 months (68% corn, 20% wheat, and 12% malted barley), and 42% from a rye mashbill bourbon by Bardstown Bourbon Company aged 2 years and 1 month (60% corn, 36% rye, and 4% malted barley). Here's a statement from the website:


"Fusion Series #1 is Bardstown Bourbon Company’s first Kentucky straight bourbon whiskey of its own. The product is a blend of 60% of the distillery’s two-year-old wheat and high-rye Kentucky bourbons, along with 40% of 11-year-old sourced Kentucky bourbon. The synthesis between these young and aged bourbons creates a rich, balanced and lasting finish. "


At first glance we all thought the same thing; a mix of 2 year bourbons? But wow, this stuff really is surprising. The 11 year bourbon really mellows out the younger stuff and makes this blend a pleasant pour. Here are a few tasting notes from some of our members:


Cory Welch- Executive Bourbon Steward and Founding Member of the Bourbon Underground:

Nose: Honey cornbread, skillet apple pie and kettle corn.

Palate: Corn Nuts, spicy peanuts, light fruit.

Finish: Smooth, pleasant medium finish. Sweet, brown spice and no burn.


Josh Bono- Founding Member of the Bourbon Underground:

Nose: sweet corn and nuts, caramel covered green apples, pepper.

Palate: Honey and green apple, corn, pepper, slight burn.

Finish: Sweet with a short to medium finish. Not bad!


Adam Arredondo- Member of the Bourbon Underground:

Nose: Baking Spices, nutmeg, burnt marshmellow and brown butter.

Palate: Peanut brittle, brown spice, cake frosting and corn.

Finish: Medium finish. Peanut butter and vanilla.



Bardstown Bourbon Company Discovery Series #1 Kentucky Straight Bourbon Whiskey (60.605 proof/121.21% ABV)


Next up is the Discovery #1 Series. This release is a blend of 4 different sourced Kentucky bourbons: 5% is aged 13 years (78% corn, 12% rye, 10% malted barley), 75% aged 11 years and 7 months (74% corn, 18% rye, and 8% malted barley), 10% aged 10 years (75% corn, 13% rye, and 12% malted barley), and 10% aged 5 years (75% corn, 13% rye, and 12% malted barley). Here's a statement from the website:


"Discovery Series #1 is a unique blend of four Kentucky straight bourbons aged between five and 13 years – the combination of deep tobacco and leather notes from the 11 and 13-year-old bourbons, baking spices from the 10-year-old bourbon, and bright fruit from the 5-year-old bourbon bring out layers of flavor and complexity. Discovery Series #1 is a very limited release that is available in highly allocated quantities." 


First things first; we all wanted to live in this glass as soon as it was poured. This stuff has an absolutely amazing nose! We spent more time smelling this than we did drinking it. Here are a few of our tasting notes:


Cory Welch- Executive Bourbon Steward and Founding Member of the Bourbon Underground:

Nose: Old fashioned hard cherry candies, light char, and tobacco.

Palate: Tobacco and leather is dominant, also baked cinnamon pears.

Finish: Long, lingering finish of light spice and oak. Very pleasant!


Josh Bono- Founding Member of the Bourbon Underground:

Nose: chocolate covered cherries, burnt brown sugar, charred oak.

Palate: Dark cherries on the front, vanilla, slight oak with tobacco and baking spices.

Finish: Slight tobacco and brown sugar crumbles. Very easy drinking for 121 proof.


Adam Arredondo- Member of the Bourbon Underground:

Nose: Luxardo cherries, oak, baking spices and caramel.

Palate: Dried cherries, leather, burnt brown sugar, black pepper and cinnamon.

Finish: Long, smooth finish with dark red fruits, spices, and tobacco.


We really enjoyed both of these pours, hopefully you can find them on shelves in your area. Both are available in Kentucky and Indiana through Republic National Distributing Company, in California and Florida through Southern Glazers Wine and Spirits, in Illinois through Breakthru Beverage Group, and in Nashville and Central Tennessee through Ajax Turner Distributing Company.
